This is such a great time of year with all the fresh produce! I live in an area that has an abundance of amazing fruit available from June to September, and we love going to the farmers market. One of my most favorite desserts for the summer is strawberry shortcake. I’ve mentioned before that I love to bake, but I also have limited time, so I try to modify recipes to make them easier or quicker. This is a super easy dessert that takes about 10 minutes to put together and it is really delicious.

Shopping List:

1 pound cake
1 container of strawberries
Sugar
1 can of whipped cream

Start by turning the broil feature on on your oven. Then, slice the pound cake into 3/4 inch thick slices and place them onto a baking sheet. Put the baking sheet into the oven, making sure to check on it frequently as the broil can burn it if you aren’t careful. You’re looking for a nice toast or caramelization on the cake. If you want to get really fancy and change the flavor a little, sprinkle a tiny bit of salt on the cake, it will totally change the flavor of the final product.

Meanwhile, slice the tops off of all the strawberries, then quarter them. Put all cut strawberries in a bowl, add some sugar. The amount of sugar depends on the tartness of the strawberries. Strawberries earlier in the season are usually a bit more sour and will need more sugar than ones later in the season.

Once the cake is toasted, let it sit for a bit to cool down, then take a slice and place it on a plate or in a bowl. Put three spoonfuls of the strawberries on top of the cake, being sure to get some of the liquid off as well. Then top the whole thing with a generous amount of whipped cream. A quick and easy dessert that is also delicious!
